1. Why does green Matcha tea turn into yellow during baking?

3. Why does good Matcha appear precipitation?
Green tea extract can dissolve in water, such as tea polyphenols, which are used as raw materials for tea beverage. However, green tea extract is yellow color, not green. Matcha is powdery solid milled by green tea. ● If the amount of Matcha is too little, the cake is not easy to appear green. If it is added too much, the internal structure of the cake is rough and the elasticity is reduced. The recommended addition amount of matcha tea powder is 1.2% - 1.4%.
